毛毛蟲魚鬆麵包

沙拉醬,魚鬆(或肉鬆)適量
奶油40G
雞蛋一顆
麵包
高筋麵粉440G
奶粉60G
鹽1/2茶匙
糖1~2大匙
雞蛋1顆
即溶酵母粉5G
水230G

1 [麵包]材料全部放入盆中攪拌均勻,揉成糰

2 再用攪拌器或手揉至麵糰有延展性時包入奶油,繼續揉到表面光滑,可拉一層薄膜時蓋著做第一次發酵

3 大約30~50分至麵糰兩倍大時取出(用手戳下去不會彈回來)

4 分割成8~9個小麵糰,鬆弛10分鐘

5 取出桿成長方型(盡量桿到底,把氣泡擠出去)

6 擠上沙拉醬,灑魚鬆

7 捲製2/3處,尾端切成條狀(要分開比好看)

9 用黑色的芝麻,紫米或黑豆當眼睛

10 將它扭曲成各種形狀進行最後發酵,發酵約2倍大時刷上蛋液(這些要分兩次烤)

11 用170度烤12~15分,表面金黃時取出就完成了(依個人烤箱調整時間)
